The Cavaion Veronese cellar, built in 1997, was designed around the ageing needs of our wines. This is where their wines rest and develop their character for long periods of time, cradled by barriques and tonneaux on the underground floor. The highlight of the winery is the ‘fruttaio‘, a large room where the drying of the grapes that will become our wines takes place. This modern-styled Amarone offers impressive quality and value. Seemingly endless rich aromas of chocolate, licorice, raisin, roasted nuts and olives lead to a palate of vanilla, spice and dried fruit. Supple tannins, balanced acidity and a lengthy finish help add a layer of elegance, partner with braised beef and risotto.
