The Cavaion Veronese cellar, built in 1997, was designed around the ageing needs of our wines. This is where their wines rest and develop their character for long periods of time, cradled by barriques and tonneaux on the underground floor. The highlight of the winery is the ‘fruttaio‘, a large room where the drying of the grapes that will become our wines takes place. The characteristic fragrance of cherry merges with hints of spices, cocoa and vanilla. With a full and velvety flavour, it displays all its power in a warm, elegant body. Excellent with game, grilled meats and stews, however we recommend it also by itself, as the ideal meditation wine.
